Chicken Adobo

  1. In a large bowl, place in the already cut chicken, soy sauce and garlic and mix till well combined. For at least 1 hour, marinate the mixture and place in the fridge. (Optional but recommended: The longer the mixture is marinated, the more flavourful the end product will become)
  2. Heat a large cooking pot and pour oil. Wait till the oil is hot enough.
  3. Once hot enough to cook the chicken, for 2 minutes pan fry the chicken on each side. Do this to ensure juicy and flavourful chicken!
  4. Alongside the rest of the marinade, pour in the water and cloves of garlic and let it boil.
  5. Place the dried bay leaves and whole peppercorn in the pot and let the mixture further simmer for 30 minutes (or until the chicken becomes Tender)
  6. Pour the vinegar, stir the stew and continue to let it cook for 10 minutes.
  7. Assthe sugar and salt. Continue to stir until the sugar and salt is dissolved. Turn of the heat.
  8. Serve hot, Share with your Loved ones (or not adobo can simply be too good to share) and enjoy!
